Instructions

  1. Heat the oven to 350°F. Line an 8-inch square baking pan with parchment, leaving an overhang on two sides.
  2. Stir together the oats, flour, brown sugar, and salt. In another bowl, stir the peanut butter, honey, melted butter, and vanilla until smooth. Combine the wet and dry mixtures; stir in the peanuts if using.
  3. Press about three-quarters of the oat mixture firmly into the pan. Spread the jam over it, leaving a ¼-inch border. Crumble the remaining oat mixture on top and press lightly.
