Ingredients

  • 3 medium pears, peeled, cored, and sliced
  • 1 tablespoon lemon juice
  • ¾ cup almond flour
  • ¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted and cooled slightly (or olive oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • Zest of 1 lemon
  • Powdered sugar, for serving (optional)

Instructions

  1. Preheat the oven to 350°F. Grease an 8- or 9-inch round cake pan and line the bottom with parchment paper.
  2. Toss the sliced pears with the lemon juice and set aside.
  3. In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
  4. In a separate large bowl, whisk the sugar and melted butter until smooth. Add the eggs, vanilla extract, almond extract (if using), and lemon zest, and whisk until fully combined.
  5. Add the dry ingredients to the wet ingredients and stir just until a smooth batter forms.
  6. Spread the batter evenly into the prepared pan. Arrange the pear slices over the top, gently pressing them slightly into the batter.
  7. Bake for 40–45 minutes, or until the cake is set in the center and a toothpick inserted comes out clean.
