Baked Apples with Cinnamon & Nuts

Few things make a kitchen feel cozier than apples baking in the oven. As they soften and release their juices, the air fills with the familiar scent of cinnamon and warm fruit—comforting, nostalgic, and inviting. This simple baked apple dish leans into that feeling without turning dessert into a project. It’s easy enough for a weeknight, flexible enough for breakfast or dessert, and made with ingredients you likely already have on hand.

The key to good baked apples is choosing the right variety. Apples that are firm and slightly tart hold their shape as they cook and won’t collapse into applesauce. Honeycrisp, Braeburn, Fuji, and Granny Smith are all reliable options. Sweeter apples will soften more and taste more dessert-like, while tart apples create a nice balance with the cinnamon and sugar. You can leave the skins on for a rustic look and a bit of texture, or peel them if you prefer a softer, more uniform result—both work well here.

The flavoring is intentionally simple. Cinnamon does most of the heavy lifting, supported by a touch of vanilla and just enough sweetener to encourage caramelization rather than mask the apples’ natural flavor. Chopped nuts add richness and contrast, giving you something to bite into against the tender fruit. As the apples bake, butter melts into the filling and combines with the juices at the bottom of the dish, creating a light sauce that’s perfect for spooning over the top.

To keep the apples tender but not mushy, they’re baked covered at first so they soften gently, then uncovered so the tops can brown slightly and the juices reduce. Recipe: Baked Apples with Cinnamon & Nuts

Makes 4 servings

Ingredients

  • 4 medium apples
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons brown sugar or maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ½ cup chopped nuts (walnuts, pecans, or a mix)
  • ¼ cup water or apple juice

Instructions

  1. Preheat the oven to 375°F and lightly grease a baking dish large enough to hold the apples in a single layer.
  2. Core the apples and cut them in half, or leave them whole if you prefer. Arrange them cut-side up in the baking dish.
  3. In a small bowl, stir together the melted butter, brown sugar or maple syrup, cinnamon, nutmeg (if using), vanilla, and salt. Fold in the chopped nuts.
  4. Spoon the nut mixture evenly into the centers of the apples, letting some spill over the tops.
  5. Pour the water or apple juice into the bottom of the baking dish. Cover loosely with foil and bake for 25 minutes.
  6. Remove the foil and continue baking for 10–15 minutes, until the apples are tender when pierced with a knife and the tops are lightly browned.
  7. Let the apples rest for 5 minutes before serving, spooning some of the pan juices over the top.
