Black Beans & Corn: The Shortcut You’ll Use All Week

When weekday meals feel rushed and inspiration runs low, having a ready-to-go base in the fridge can make all the difference. A simple mix of black beans, corn, bell peppers, and red onion is a versatile staple that can be transformed into a variety of fresh, flavorful dishes in minutes. Packed with protein, fiber, and color, it’s hearty enough to build meals around, yet light enough to work as a topping, filling, or side. From quick breakfasts to easy dinners and snacks, this mix offers endless flexibility, helping busy cooks create satisfying meals without the stress of starting from scratch each time.

Why it works? This Black Bean & Corn Mix is the ultimate multitasker. The beans provide protein and fiber, corn adds natural sweetness, and bell peppers and onion bring crunch and color. With a batch ready in the fridge, meals come together in minutes — no extra chopping required. It’s also gluten-free and vegan.

The Mix

This recipe uses canned beans and corn for maximum convenience, making it quick to throw together with just a few minutes of chopping. However, it’s easy to adapt based on what you have on hand: fresh or frozen corn can be swapped in when in season, and home-cooked beans work just as well as canned. No matter which version you choose, the result is a colorful, nutrient-packed base you’ll find yourself reaching for again and again.
