  • 1 whole chicken (about 4-5 lbs)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 3 Tablespoons olive oil
  • 1 lemon, halved
  • 4 sprigs fresh thyme or rosemary
  • 1½ lbs baby potatoes, halved
  • ¾ lb green beans, trimmed
  • 1 Tablespoon butter
  1. Preheat oven to 425°F. Pat the chicken dry. Coat with 2 Tablespoons of olive oil and season with salt and pepper. Stuff the cavity with lemon halves and herbs.
  2. Place chicken in a roasting pan. Toss potatoes with remaining 1 Tablespoon of olive oil, salt, and pepper and arrange around the chicken.
  3. Roast chicken for 20 minutes per pound, or until juices run clear and a thermometer inserted into the thigh reads 165°F.
  4. Meanwhile, blanch green beans in salted water for 3 minutes, drain, and toss with butter.
  5. Let chicken rest for 15 minutes before carving. Serve everything family-style.

Baked Ziti with Sausage & Ricotta

Cheesy, saucy baked pasta is a surefire way to make everyone happy. You can assemble it ahead and bake it when you’re ready.

Makes 6–8 Servings

  • 1 lb ziti or penne pasta
  • 1 lb Italian sausage, casings removed
  • 1 jar (24 oz) marinara sauce
  • 1½ cups ricotta cheese
  • 2 cups shredded mozzarella
  • ½ cup grated Parmesan
  • 1 egg
  • Salt and pepper
  1. Preheat oven to 375°F. Cook pasta just shy of al dente. Drain and set aside.
  2. Brown sausage in a skillet until cooked through. Stir in marinara sauce.
  3. In a bowl, combine ricotta, egg, 1 cup mozzarella, Parmesan, salt, and pepper.
  4. In a 9×13 dish, layer pasta, sauce, and ricotta mixture. Top with remaining mozzarella.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake 10 more minutes until bubbly.

  • 1 lb ground beef or ground turkey
  • 2 teaspoons taco seasoning
  • ½ cup water
  • 8 small tortillas (corn or flour)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • ½ cup sour cream
  • ½ cup salsa or hot sauce
  • 1 avocado, sliced or mashed
  1. Brown meat in a skillet. Add taco seasoning and water, and simmer until thickened.
  2. Warm tortillas in a dry skillet or in foil in the oven.
  3. Set up a taco bar with tortillas, meat, and toppings. Let everyone assemble their own tacos.

One-Pan Lemon Herb Salmon with Couscous & Asparagus

This light, fresh dinner looks impressive but comes together in under 30 minutes.

Makes 4 Servings

  • 4 salmon fillets (6 oz each)
  • 1 lemon, sliced
  • 1 Tablespoon olive oil
  • 1 teaspoon dried oregano or dill
  • Salt and pepper
  • 1 bunch asparagus, trimmed
  • 1 box (about 5 oz) couscous
  • 1¼ cups water or broth
  1. Preheat oven to 400°F. Line a sheet pan with parchment.

  • 1 red onion, sliced
